Eggs and Corn (Huevos con Maiz)

(Huevos con Maiz)

  • 3 T. butter
  • 2 med. onions, sliced
  • 1 c. corn kernels (canned is fine)
  • 2 green peppers, chopped
  • 1 c. chopped tomatoes
  • ½ tsp. pepper
  • ½ tsp. chili powder
  • 2 T. olive oil
  • 2 tsp. salt
  • 12 eggs

Melt the butter in a saucepan. Add the onions and green peppers and sauté for 10 minutes, stirring frequently. Add the tomatoes, 1 teaspoon of the salt, ¼ teaspoon of the pepper and the chili powder. Cover and cook over low heat for two minutes. Spread the mixture on the bottom of an 8-inch or 9-inch baking pan. Spread the corn evenly over the tomato mixture and sprinkle with the olive oil. Break the eggs carefully on top of the corn. Sprinkle with remaining salt and pepper. Bake in 375° oven for 10 minutes, or until the eggs are set. Serve directly from the baking dish. Serves 6.
