Easy Tofu Cakes
Etsuko Tanigawa
- 2 blocks tofu, drained
- 1/2 carrot, grated
- 1/2 konnyaku, chopped
- 5 shiitake mushrooms, soaked and chopped
- 1/2 block kamaboko, chopped
- 4 stalks green onions
- 2 eggs, slightly beaten
- salt to taste
- oil for frying
- Mix all ingredients together.
- Form into patties and fry in 1-inch deep oil until brown.
- Serve with dipping sauce.
Dipping Sauce:
- 1 c. sweet chili sauce (Mae Ploy)
- 1/2 Tbsp. shoyu
- 1/2 Tbsp. vinegar
- 1/2 Tbsp. sugar
