Easy Persimmon Cake
- 1 box spice cake
- 1 box lemon, butterscotch or vanilla instant pudding mix
- ¾ cup water
- 4 eggs
- 1 cup mashed ripe persimmon
- ¾ cup salad oil
Combine cake mix, pudding mix, water, eggs and persimmon in mixing bowl. Beat at high speed for two minutes. Pour into greased 9 x 12 pan. Bake at 350 degrees for 30 minutes.
Frosting:
- 2 egg whites
- ¼ tsp. cream of tartar
- ½ cup white corn syrup
- ½ cup mashed persimmon
Add cream of tartar to egg whites. Beat until frothy. Gradually add syrup while beating. When thick enough to spread, fold in mashed persimmon.
