Curried Meat (Carne de Curry en Polvo)

(Good for leftover meats, pork, veal and fowl.)
- 4 c. cooked meats
- 1 c. stewed tomatoes
- 1 med. onion, cut in 6 wedges
- 3 sm. minced apples
- 1 tsp. ground ginger
- 1 to 2 tsp. curry powder
- ½ tsp. turmeric (if you have it, used more for color than flavor)
- ½ c. water
Place the meat, tomatoes, onion, apples, ginger, curry powder, turmeric and water in a pot. Cook over low heat for 40 minutes. Make sure water does not boil away. Add small amounts if necessary. (Sauce should be thin.) Serve with white rice and your favorite beans. Serves 4 to 6.
