Corned Beef Guisao (Guisado de Corned Beef)

- 1 T. achiote oil
- 1 (12-oz.) can corned beef
- 1 clove garlic, minced
- 1 med. green bell pepper, sliced
- 1 med. round onion, sliced
- 1 sm. bunch Chinese parsley, chopped
- 1/2 tsp. curry powder
- 1/2 tsp. black pepper
- 1/2 tsp. oregano leaves
- 1/4 tsp. sugar
- 1 (8-oz.) can tomato sauce
- 1/2 c. water
In a saucepot add the oil, corned beef, garlic, bell pepper, onion, Chinese parsley, curry powder, pepper, oregano, sugar, tomato sauce and water. Bring to a simmer on medium heat for 10 minutes. Turn heat down to low and continue cooking for another 15 minutes.
