Coconut Macadamia Nut Bread Pudding

  • 2 cups milk
  • 5 cups two or three day old bread cut in cubes
  • 2 eggs slightly beaten
  • ¾ cup sugar
  • 1 tsp. vanilla
  • ½ tsp. cinnamon
  • ½ cup macadamia nuts, chopped
  • 5 tbsp. butter
  • ½ cup flaked coconut

Scald milk. Put bread cubes in a bowl and pour milk over cubes. Add next seven ingredients and mix to combine thoroughly. Pour into 8″ cake pan. Dot with butter and bake in a 300 degrees F. oven for 40 to 50 minutes or until knife inserted in pudding comes out clean. Maybe served warm or cold topped with whipped cream and half of a cherry. Enough for 6 to 8 servings.
