Papaya Pudding

  • 2 cup ripe papaya pulp (mashed)
  • ½ cup bread crumbs
  • 1 cup flour
  • ¼ cup butter
  • ¾ cup sugar
  • 1 egg, well beaten
  • 1 tsp. flavoring (vanilla, grated lime or orange rind)
  • ½ cup crushed pineapple, drained (optional)

Cream butter and sugar. Add well beaten egg, then flour. Add papaya, salt and bread crumbs, and flavoring. Steam in a buttered pan for 2½ hours or until done. Serve with sauce.

Sauce:

  • 1 cup milk
  • ½ cup ripe papaya pulp
  • 1/3 cup sugar
  • ¼ tsp. vanilla
  • 2 tbsp. flour

Mix all ingredients except flavoring and boil continuously stirring until thick. Add flavoring immediately after removing from fire.
