Claire’s Breakfast Potatoes

  • 3 Potatoes, boiled, cooled, peeled, sliced into approx. 1″ square x ½” thick
  • 1 link Portuguese Sausage, diced
  • 1 Round Onion, chopped
  • 2 Tbsp. Oil
  • Salt and Pepper to taste

Place oil in non-stick fry pan, cook sausage to release oil, add round onion and sauté till clear. Add potatoes, salt and pepper to taste, and stir fry to preferred doneness. (Some like it brown and crispy)

Serve with eggs prepared to preference.
