Chocolate Chip and Sunflower Seed Cookies

  • 1/2 cup soft butter or margarine
  • 1/2 cup firmly packed brown sugar
  • 1 egg
  • 1-1/2 tsp vanilla
  • 1/2 cup whole wheat flour, unsifted
  • 1/2 cup toasted wheat germ
  • 1 pkg (6-oz) semisweet chocolate chips
  • 1/2 cup hulled sunflower seeds, unsalted
  • 1/2 cup sweetened, shredded coconut

Cream together butter and sugar; add egg and vanilla and beat until fluffy. In another bowl stir together the flour, wheat germ, soda and salt. Add to butter mixture; mix until blended. Stir in chocolate chips, sunflower seeds and coconut. Drop by rounded teaspoonfuls about 2 inches apart on greased cookie sheet. Bake in 350 degree oven for 10-12 minutes or until edges are lightly browned. Remove to a rack to cool.

Yield: 4 dozen cookies
