Brown Sugar Refrigerator Cookies

  • 1 block soft butter or margarine
  • 1 cup golden brown sugar, firmly packed
  • 1 egg, unbeaten
  • 1 tsp vanilla
  • 1 tsp grated orange rind
  • 1-3/4 cups sifted all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking powder

Beat together butter, sugar, egg, vanilla and orange rind. Combine flour, salt and baking powder; sift into first mixture, mix well. Chill dough then shape into a roll about 2-1/2 inches in diameter and wrap in foil or waxed paper. Store in refrigerator for several hours or overnight. Unwrap, cut in 1/8-inch slices; lay on greased cookie sheet, then use floured cookie cutters to cut slices into fancy shapes, if desired. Bake cookies at 400 degrees for 6-8 minutes. Remove to racks to cool.

Yield: 4-5 dozen cookies
