Bitsu Bitsu (Sweet Potato Pancake)

  • 2 cups grated raw sweet potato
  • 1/4 cup flour
  • 3 Tbsp sugar
  • 1/4 cup salad oil for frying

Wash, peel and grate sweet potato. Mix thoroughly with flour and sugar; shape into patties about 2-1/2 inches in diameter and 1/2 inch thick. Heat oil to 375 degrees and fry patties on both sides until golden brown. Drain on absorbent paper.

Yield: 4 servings
