Avocado Pie
- 1 cup avocado, blended
- 3 large egg yolks
- ¼ cup sugar
- 1 tsp lemon juice
- Cinnamon to taste
- Baked pie shell
Mix together avocado, egg yolks, sugar, lemon juice and cinnamon. Heat on stove until egg is done. DO NOT BOIL! Remove avocado from heat then add 1 pkg gelatin which has been mixed with 1/4 cup cold water. Sprinkle salt over 3 egg whites and beat on medium speed until stiff. Add 1/2 cup sugar gradually, then beat on high. Fold in avocado; mix. Let set. Pour in baked pie shell and refrigerate. Top with Cool Whip when ready to serve.
