Anmitsu

- 1 kanten
- 2 cups water
Wash kanten. Tear in strips, soak in water for 30 minutes and cook until dissolved. Pour into pan to cool and set. Cut into half-inch cubes.
- 1 small can anko
- 1 small can mandarin oranges
- 1 banana, sliced
- 1 apple, cut in half-inch cubes
- 1 small bottle of Maraschino cherries
- 1 small bottle of maple syrup
Arrange pieces of kanten and fruits attractively in individual bowls, topping them with anko and cherries. Refrigerate. Pour about a jigger of maple syrup over each and serve.
