An (Black Bean Paste)

  • 1 12-oz. pkg. azuki (black beans)
  • 6 cups water
  • 2 cups sugar
  • ½ tsp. salt

Soak the beans in water overnight and drain. Add fresh water to generously cover; cook adding water as necessary

When very tender, add the sugar and salt. Bring to a boil; then simmer while you continue to stir until mixture is thick. Cool or chill. Shape into balls, the size of walnuts. Fills 24 mochi.
