Special Bar Cookies
- 1 pkg applesauce-raisin cake mix
- 3/4 cup quick-cooking oats
- 1/4 cup wheat germ
- 1/2 cup light molasses
- 1/4 cup orange juice
- 2 eggs
- 2 Tbsp vegetable oil
- 1/2 cup raisins
- 1/2 cup flaked coconut
Combine cake mix, oats and wheat germ. Add molasses, orange juice, eggs and oil; stir until well-blended. Stir in raisins and coconut. Spread in greased 15x10x1-inch jelly roll pan. Bake at 375 degrees about 20 minutes or until cookies are lightly browned and pull away from edge of pan. Cool. Frost with Orange Glaze; cut into 1½x2-inch bars. Place a walnut or pecan half on each bar, if desired.
Yield: 50 cookies
Orange Glaze: Blend 2 cups powdered sugar with 1/4 to 1/3 cup orange juice to make a glaze thin enough to pour, but thick enough to spread.
Note: You may freeze after baking and frost when ready to use.
