Simple Meatball Casserole

  • 1 lb ground beef
  • 1/2 cup dry bread crumbs
  • 1/3 cup milk
  • 1 egg
  • 1/4 cup chopped onion
  • 1½ cups shredded cheddar cheese
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/8 tsp garlic salt
  • 1 Tbsp butter
  • 1 can condensed cream of mushroom soup
  • 2 pkg mixed vegetables frozen in butter sauce

Cook vegetables according to package directions. Combine the ground beef, bread crumbs, milk, egg, onion and seasonings. Shape into 20 meatballs. In a large skillet, melt butter and slowly brown meatballs. Arrange meatballs in a shallow 1½-quart casserole. Combine soup, cooked mixed vegetables and 1 cup shredded cheddar cheese. Pour over the meatballs. Sprinkle remaining 1/2 cup cheese over casserole. Cover with foil and bake in 350 degree oven for 45 minutes.

Yield: 6 servings
