Hawaiian Papaya Pie
- 2 cups mashed cooked papaya
- 1 cup brown or white sugar
- 2 eggs, beaten
- Pinch of salt
- 1 cup cream or milk
- 1-1/2 tsp cinnamon
- 1/2 tsp allspice
- 1/2 tsp nutmeg
- 1 tsp vanilla
- 1 9-inch unbaked pie shell
Use firm half-ripe papayas. Peel and cut into sections. Add a small amount of water and cook as you would pumpkin, then drain and mash. Mix ingredients in order listed above. Add milk gradually to keep mixture smooth. Pour into unbaked pastry shell. Bake in moderate oven at 375 degrees about 1 hour or until firm. When ready to serve, top with whipped cream.
