Lanai Lime Pie
- 2 cups flaked coconut
- 1/4 cup margarine, melted
- 4 cups miniature marshmallows
- 1/3 cup lime juice
- 4 eggs, separated
- Green food coloring
- 1 tsp grated lime rind
- 1/4 cup sugar
Combine coconut and margarine. Press into 9-inch pie plate. Bake at 300 degrees, 25-30 minutes, or until evenly browned. Melt marshmallows with juice in saucepan over low heat; stir occasionally until smooth. Stir small amount of hot mixture into egg yolks; return to hot mixture. Cook over low heat, stirring constantly, 5 minutes or until thickened. Add few drops food coloring and rind; mix well. Chill until slightly thickened, mix until blended. Beat egg whites until foamy; gradually add sugar, beating until stiff peaks form. Fold into lime mixture; pour into crust. Chill. Garnish with lime slices and mint, if desired.
