Feather Chiffon Cake

Pan Size: 10-inch tube pan
Baking Time: 45 minutes
Temperature: 350°

  • 1 1/2 c. cake flour
  • 1 1/2 c. sugar (1/2 c. for whites)
  • 1/2 tsp. salt
  • 1 tsp. cream of tartar
  • 9 eggs, separated
  • 1/2 c. water
  • 1/2 c. oil
  • 1 tsp. lemon extract
  • 1 tbsp. baking powder
  1. Sift the flour, 1 c. sugar, salt, and baking powder.
  2. Make a well and add the oil, egg yolks, water, and extract.
  3. Beat until smooth.
  4. Add the cream of tartar into the egg whites and beat until stiff.
  5. Add sugar to the whites.
  6. Fold the egg mixture into the whites.
  7. Pour into an ungreased 10″ tube pan.
  8. Bake at 350° for 45 minutes.
  9. When done, invert cake and cool.

NOTE: Bake on the bottom rack of the oven. You may serve with whipped cream.
