Baby Pizza

  • 1 package Hot Roll Mix (or use your favorite Italian bread recipe)
  • 1 large onion, chopped
  • 1½ cloves garlic, minced
  • 1½ tbsp. olive oil
  • 6 oz. tomato sauce
  • 2 tbsp. water
  • ¼ tsp. celery salt
  • ¼ tsp. rosemary
  • Salt and pepper to taste
  • Monosodium glutamate
  • ½ lb. Mozzarella cheese
  • ¼ lb. pepperoni
  • ¼ cup grated Parmesan cheese
  • ¼ tsp. oregano

Follow directions on box of Hot Roll Mix and let dough rise once. Saute onions and garlic in the olive oil until golden. Add tomato sauce, water, and seasoning. Let this simmer while dough is rising. When dough has doubled in size, take a small piece, about the size of a marble, put it onto an ungreased cookie sheet, and pat into a circle about 1½ inches in diameter. (A little oil on fingers makes it easier to stretch dough to proper size and to handle it). Make sure dough is thin. On each circle, spoon about 1 teaspoonful of sauce. Top with thin slice of Mozzarella cheese and a slice of pepperoni. Sprinkle with grated Parmesan cheese. Bake for 7 to 10 minutes in hot oven (450 degrees) until cheese is bubbly and crust begins to brown. Serve hot!

These may be refrigerated and reheated or they may be frozen baked or unbaked. Makes 36 bite-size pizza.
