Baked Chicken
- 1 2-2½ lb fryer, cut up
- Onion salt, garlic salt, poultry seasoning, seasoned salt, salt and pepper
- Water
- 2 medium onions, sliced
- 1/4 cup butter
Season chicken pieces as desired with preferred seasonings and place in shallow baking dish skin side down, without overlapping. Add enough water to cover bottom of baking dish. Place dab of butter on top of each piece of chicken; reserve an equal amount for turn-over time. Bake uncovered in pre-heated 400 degree oven for 1/2 hour. Remove dish from oven, turn chicken over. Add remaining dabs of butter to tops of pieces. If necessary, add water to cover bottom. Return to oven; bake 10-15 minutes more to lightly brown chicken skin. Remove from oven and cover tops of chicken pieces with onion slices. Return to oven, reduce heat to 325 degrees and bake until fork tender, about 15 minutes longer.
