Bird’s Nest Soup

- 3 oz. bird’s nest
- 6 or 8 c. chicken broth
- Pork bone for broth
- Seasonings
- 1/2 tsp. monosodium glutamate
- Salt to taste
- 1/2 c. minced chicken
- Minced ham
Soak bird’s nest in warm water over night and change water several times. Wash in clear water and drain. Add drained nest to boiling chicken broth in kettle and add seasonings. Cover and simmer over moderate heat for 45 minutes. Add 1/2 cup minced chicken. Stir thoroughly and remove to soup bowl and serve with minced ham and chopped Chinese parsley or chopped green onions. Serves 4 or 6.
