Papaya Warabi Salad

  • Handful warabi stalks, parboiled
  • 3 cups coarsely grated unripe papaya
  • 2 cloves garlic, chopped
  • 1 small chili pepper, chopped
  • 1 Tbsp. fish sauce
  • 2 Tbsp. lemon juice
  • 2 Tbsp. crushed peanuts
  • Pepper to taste
  • Lettuce and cabbage leaves
  • 1/2 tomato, sliced

Mix grated papaya and chopped warabi with garlic, chili, fish sauce, lemon juice and peanuts. Season with pepper. Serve on a bed of lettuce and cabbage leaves. Garnish with slices of tomato. Serves 4.
