Cucumber Salad
- 2 medium size cucumbers, peeled and sliced very thin
- 1/2 cup commercial sour cream
- 1 or 2 tablespoons lemon juice
- Salt or soyu sauce to taste
- Dash of pepper
- 1/4 teaspoon onion powder, optional
- Watercress or parsley
Chill cucumber slices in bowl of ice water for 1/2 hour, drain. Mix together the cream, lemon juice, sugar, onion powder, pepper, and salt or soyu sauce to taste. Stir into cucumber slices and serve on watercress or a few sprigs of parsley.
