Banana Finger Cake

  • 1 cup dates (or raisins) fluffed in hot water & drained
  • ½ cup butter or margarine
  • 1½ cups sugar
  • 2 eggs
  • 2 cups sliced ripe bananas
  • 1 teaspoon baking powder
  • ¼ teaspoon soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla
  • ¼ teaspoon mace (optional)
  • ½ cup nuts (optional)

Chop dates. In large bowl cream butter and sugar. Beat in eggs one at a time. Stir in vanilla and sliced bananas. Sift dry ingredients together and stir into butter mixture. Mix dates and nuts. Turn into well greased 13 x 9½ x 2 inch pan and bake 350 degrees for 25 to 30 minutes. If desired dust lightly with sugar. Cool in pan. Cut into fingers to serve. Makes about 4 dozen sticks. These will keep two weeks if refrigerated.
