Natural Dried Halalu

  • Several fresh halalu* (baby akule*)

Scale fish and split open from the back (butterfly). Clean the insides, remove gills, and chop off heads. Sprinkle salt lightly and let stand in refrigerator overnight. Dry in drying box half a day for soft drying or a whole day for hard drying.

Pulehu (broil) over charcoal fire, lightly for soft and well-done for hard. Wonderful raw or pulehu for pupu or with sour poi.
