San Bai Zuke #2
- 2 packages dried daikon
- 4 cucumbers
- 2 cups shoyu
- 2/3 cup vinegar
- 2 cups brown sugar
- 2 tsp. salt
- Sesame seed
- Ginger
- Monosodium glutamate (aji-no-moto)
Soak daikon in water until soft and slice the cucumber and salt it. Squeeze the water out. Boil all the other ingredients and cool before pouring into the pan of daikon and cucumber.
Keep in jars.
