Sweet Cucumber Pickles
- 4 qts. unpeeled sliced cucumber
- 2 cups vinegar
- 3 tbsp. salt
- 1 tbsp. mustard seed
- 3 cups vinegar
- 5 cups sugar
- 2¼ tsp. celery seed
- 1 tsp. whole or ground allspice
Simmer cucumbers about 10 minutes, with 2 cups vinegar, 3 tbsp. salt and 1 tbsp. mustard seed. Drain out liquid. Meanwhile boil 3 cups vinegar, 5 cups sugar and 2¼ tsp. celery seed until sugar dissolves.
Put drained cucumbers and mustard seed in sterilized jars. Pour syrup over to cover jars. Makes about 4 to 5 pints. Will keep months in cabinet. Wonderful for sandwiches.
