Cucumber Pickles #2

  • 3 pounds cucumber
  • ¼ cup Hawaiian salt

Slice cucumber and salt. Leave for three hours salted.

Boil for 5 minutes:

  • 1 cup vinegar
  • 1-2/3 cup sugar
  • ½ cup water
  • 1 tbsp. mustard seed

Take vinegar sauce off from fire and add:

  • 1 round onion, sliced
  • ¼ tsp. paprika
  • 1¼ tsp. celery seed.

Wash and squeeze cucumber to drain off excess water. Pour hot vinegar mixture over cucumber. Put into bottles and refrigerate to keep.
