Mango Bread

Pat Palama

  • 2 c. flour
  • 2 tsp. soda
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 1/2 c. sugar
  • 1/2 c. Wesson oil
  • 1/2 c. melted margarine
  • 1/2 c. chopped nutmeats
  • 1 tsp. vanilla
  • 2 c. sliced mangos
  • 3 eggs

Sift dry ingredients together into a large bowl and make a well in center. Place other ingredients into well and mix together. Pour into greased loaf pan and let stand for 20 minutes at room temperature before baking at 350 degrees for 1 hour.

This bread mellows and taste blends beautifully if frozen for a week or longer.
