Baked Chicken

  • 1 broiler, cut in halves
  • 2 tablespoons Sauterne
  • Salt

Sauce:

  • 1/2 cup shoyu
  • 3 tablespoons coarse brown sugar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, grated
  • 1/4 teaspoon gourmet powder
  • Vegetable oil

Rub chicken with Sauterne, sprinkle lightly with salt and allow to stand for 1 hour. Then soak in the sauce for one-half to 1 hour, turning occasionally.

Rub soaked chicken with vegetable oil just before baking. Lay halves in baking pan, skin side down first, and bake for 1 hour at 350° F. After the first 30 minutes, turn to brown the other side. Serve hot.
