Lemon Cake Pie

  • ¼ cup butter or margarine
  • 1 cup sugar
  • 3 tbsp. flour
  • 1 1/2 cups milk
  • ¼ tsp. salt
  • 3 eggs, separated
  • Juice and rind of 1 lemon

Cream butter and sugar together. Add flour and salt; blend well. Add lemon juice. Beat egg yolks slightly, add milk and combine with creamed mixture. Beat egg whites until stiff and fold into mixture. Pour into an unbaked 9 inch pie shell. Bake at 400 degrees F. for 10 minutes then reduce heat to 325 degrees F. and bake for 25 minutes longer.
