Takuwan (Pickled White Radish)
- About 2 qts. of sliced daikon
- 1/3 or ½ cup salt
Salt daikon overnight.
Boil together:
- 2½ cups sugar
- 1 cup water
- 1 cup vinegar
- 1 tbsp. monosodium glutamate
Cool and add yellow coloring.
Pour over vegetables placed in jars. Refrigerate.
