Pickled Radish

To make 1 gallon sliced pickled radish

  • 7 lbs. daikon
  • ½ cup salt
  • ½ cup vinegar
  • 2½ cups sugar

Slice daikon into ready for eating size and place in a gallon jar. Mix sugar, vinegar, and salt and pour into the gallon jar. Leave it for 3 days, then it is ready. To keep, place in refrigerator.
