Portuguese-Style Fish
- 1 small fresh chili pepper, seeded and chopped
- 2 tsp Hawaiian salt
- 1 clove garlic, minced
- 3/4 cup cider vinegar
- 1/4 cup water
Mash chili pepper with salt. Add remaining marinade ingredients and stir until salt dissolves.
Marinate 2 lbs fish filets cut 1/2-inch thick 3-4 hours, turning occasionally to flavor evenly. Place fish on broiler pan; brush surface with olive oil. Broil 4 inches from heat for 4 minutes on one side; turn, brush with oil and broil 3-4 minutes longer. Serve with Onion Sauce.
Onion Sauce:
- 2 Tbsp minced green onion
- 1 Tbsp round onion, finely minced
- 1 tsp minced parsley
- 1½ Tbsp cider vinegar
- 1/2 small fresh chili pepper, seeded and finely chopped
- 1/2 tsp Hawaiian salt
Combine all ingredients; let stand 15 minutes before serving. Pour over hot fish.
Yield: 4-6 servings
