Shira Ae – Watercress (Watercress with Tofu Sauce)

  • SERVINGS 4 – 6
  • 1 bunch watercress

Wash and boil the watercress. Drain and cut into 2-inch lengths. Mix with shira ae sauce No. 1 or No. 2.

Sauce No. 1—Shira ae sauce made with miso

  • 2 teaspoons goma (pan broiled)
  • ¼ tofu
  • 3 tablespoons miso
  • 2 tablespoons sugar
  • ¼ teaspoon gourmet powder

Grind goma in suribachi until fine. Add tofu which has been squeezed almost dry in clean cloth. Grind well. Add miso, sugar and gourmet powder. Add watercress and mix well.

Sauce No. 2

  • 2 teaspoons goma
  • ¼ tofu
  • 1½ tablespoons shoyu
  • 2 tablespoons sugar
  • ¼ teaspoon gourmet powder

Method is same as for sauce No. 1. Other greens may be used.
