Pickled Codfish

  • 1 medium round onion sliced thin
  • 1 clove garlic, crushed
  • 1/8 cup cider vinegar
  • 3/4 cup water
  • 2 tbsp. salad oil
  • dash of salt and pepper

Tear dry salted codfish into thin strips and wash thoroughly under running water to remove salt. Place in pint-sized jar. Add ingredients. Cover tightly and shake to blend. Keep in refrigerator.
