Mango Custard Pie
Mrs. Iwalani Kamoku – Huatani
- 1 c cooked, strained pulp (about 10 under ripe mangoes)
- 3 eggs
- 2 c milk
- 1 c sugar (more if needed)
- Nutmeg
- Unbaked pie crust
Stew the mangoes until soft and strain through a sieve. Beat eggs slightly, add sugar and milk. Add fruit pulp to custard mixture. Pour into unbaked crust and sprinkle with nutmeg. Bake at 325° F. for about 25 minutes or until custard sets.
