Bean Sprout and Peppers
- 2 Tbsp cooking oil
- 1/2 tsp salt
- 1 tsp minced ginger root
- 2 fresh red chili or bell peppers and 2 sweet green peppers, cut into thin strips
- 1 pkg bean sprouts
- 1/4 cup chicken stock
- 1/4 tsp sugar
- 1 tsp sherry
Heat oil in wok or large skillet. Add salt and ginger, stirring. Add peppers; cook, stirring constantly, 2 minutes. Add bean sprouts; cook 1/2 minute more. Add stock and cook, covered, 2-3 minutes over medium heat. Stir in sugar and sherry.
Yield: 4 servings
