Mrs. Hatsuyo Funamoto

  • 1 kanten
  • 2 cups water

Wash kanten. Tear in strips, soak in water for 30 minutes and cook until dissolved. Pour into pan to cool and set. Cut into half-inch cubes.

  • 1 small can anko
  • 1 small can mandarin oranges
  • 1 banana, sliced
  • 1 apple, cut in half-inch cubes
  • 1 small bottle of Maraschino cherries
  • 1 small bottle of maple syrup

Arrange pieces of kanten and fruits attractively in individual bowls, topping them with anko and cherries. Refrigerate. Pour about a jigger of maple syrup over each and serve.
