Yashi No Awayuki

  • 2 white kanten
  • 1 cup water
  • 2 cups coconut milk
  • 1½ cups sugar
  • 2 egg whites
  • Few drops green coloring

Rinse kanten, squeeze water out. Add water and soak for 30 minutes. Then cook until kanten is dissolved. Add milk and sugar. When sugar is dissolved, add coloring, then fold into stiffly beaten egg whites. Pour into 8″ x 8″ square pan and cool. Cut into desired shapes.
