Manju (Sweet Bean Cake)

Make azuki koshi an (see page 121) or Tsubu an (see above).
Dough:
- 3½ cups flour, more or less
- 5 teaspoons baking powder
- 1½ cups sugar
- 3 egg whites (unbeaten)
- ½ cup salad oil
- ½ cup milk
Sift flour, baking powder and sugar. Add egg whites and oil to dry ingredients and mix. Add milk while stirring.
Make balls of prepared an, the size of walnuts. Cover each ball with dough. Place them on pieces of ti leaf or waxed paper (2″ x 2″) and steam for 15 minutes.
Coloring may be added to dough.
