Overnight Breakfast Casserole

- 6-8 slices of bread, crusts removed
- 5 eggs, beaten
- 2 pkg. imitation crab, stripped and roughly cut
- 1 c. milk
- 1 10-3/4 oz. can Cream of Mushroom soup
- 1 Tbsp. oil
- 1 small round onion, chopped
- 1 c. shredded Swiss cheese
- 8 oz. mushrooms, sliced
Butter 9×13-inch ovenproof glass dish. Line the bottom with two layers bread. Spread imitation crab on top.
Heat oil and saute’ onions. Add mushrooms and saute’ until limp. Sprinkle onion/mushroom mixture over imitation crab. Whisk eggs, milk and soup. Evenly pour over above mixture. Sprinkle with shredded cheese. Refrigerate overnight, covered. Bake uncovered in 350 degree oven about 40 minutes.
