Moyashi No Su-Karashi Ae (Pickled Bean Sprouts)
- 1 pound moyashi (bean sprouts)
- 1/2 pound chicken meat or pork
- 1 cucumber
- 1/2 carrot
- 2 tablespoons vinegar
- 1/2 teaspoon salt
- 1 teaspoon prepared mustard
- 1 tablespoon sesame oil
- 2 tablespoons shoyu
- Dash of gourmet powder
Select short and thick moyashi with lustre. Wash well. Parboil, stirring gently, and place in colander. Drain well.
Cut cucumber lengthwise in half, slice thin and salt lightly. Cut carrot in thin slices and sprinkle with little salt.
Steam chicken meat or pork and shred.
Lightly rinse cucumber and carrot; drain.
If moyashi is long, cut in desired lengths.
Mix all vegetables, arrange on platter, sprinkle shredded chicken or pork over them.
Stir together remaining ingredients and pour over vegetables.
