Daikon To Daikon No Ha No Tsukemono

  • 4 cups daikon and daikon tops (1 small daikon and tops of about 3)
  • 1 tablespoon salt
  • 5 teaspoons sugar
  • 1 tablespoon white vinegar

Finely chop tops of daikon; slice daikon in strips. Combine all ingredients in a bowl; mix and press several times. Let stand for 45 minutes, then squeeze excess water before serving.
