Pickled Cucumber Stuffed with Radish

  • 2 cucumbers
  • 1 bunch radish

Vinegar Sauce:

  • 1/2 cup white vinegar
  • 1 teaspoon salt
  • 1 small piece ginger root
  • 4 tablespoons sugar
  • 1/2 teaspoon gourmet powder

Servings 6-8

Wash radish and slice very thin. Sprinkle lightly with salt and let stand for 10 minutes. Squeeze out water and soak in vinegar sauce for 15 minutes. Drain, saving vinegar sauce.

Cut off both ends of cucumbers, peel skin, leaving a few green strips, and scoop out seeds. Stuff with radish and finely slivered ginger root and soak whole cucumbers in the vinegar sauce. Turn cucumbers occasionally so that all sides will be well seasoned.

Cut into 1/2-inch slices and serve in the same vinegar sauce.
