Nira No Tamago Toji

  • 6 eggs
  • 1/2 bunch nira (chives)
  • 6 pieces of dried mushrooms
  • 1 cup stock
  • 4 teaspoons sugar
  • 1/2 teaspoon salt
  • 1 tablespoon shoyu
  • 2 to 3 tablespoons oil

Soak mushrooms in water for 10 minutes and cut into small pieces. Wash and cut chives into one-inch lengths.

In frying pan, heat oil and drop chives. This will sizzle. Add mushrooms. Immediately add the rest of the ingredients except eggs and simmer for a few minutes.

Break eggs into a bowl and stir with chopsticks. Then pour eggs over the cooking ingredients and cook until eggs are partially done.

Serve hot.
