Pineapple Pickles
Mrs. Helen I. Billings – Honokaa
- Fresh pineapple
- 5 c sugar
- Spice bag: 2 cinnamon sticks
- 1 T whole cloves
- 1 T whole allspice
- 2 slices each orange and lemon with peel on.
- 2 c cider vinegar
- 1/2 tsp salt
Peel and core pineapple. Slice and cut into bite size. Have 4 qts.
Make a syrup with other ingredients to which has been added the orange and lemon slices. Drop the pineapple into syrup and cook until transparent and tender. Allow to stand overnight. Remove spice bag and pack into jars.
