Chunk Cucumber Pickles

  • 1 1/2 qt chunk cucumber
  • 1 large onion, sliced
  • 3 T med. coarse salt
  • 1 qt water
  • 2 c vinegar
  • 1 1/2 c sugar
  • 1/4 c enriched flour
  • 1 1/2 tsp celery seeds
  • 1 1/2 tsp white mustard seed
  • 1/2 tsp tumeric

Pare cucumber. Cut in half lengthwise, cut into 1 inch chunks. Add onions, salt and water. Let stand 3 hours. Drain. Combine other ingredients and boil till smooth and thick. Add cucumbers, stirring constantly. Heat to boiling. Pack into sterilized jars and seal.
