Cucumber Pickles

Mrs. Fusae Nakakura – Haina

  • 1 qt sliced cucumber
  • 2 lge onions
  • 1 lge sweet pepper
  • 2 qt water
  • 1/2 tsp tumeric powder
  • 1/4 c salt
  • 1 pt vinegar
  • 1 tsp mustard seed
  • 1 c light brown sugar

Use green cucumbers. Scrub well. Reject ends, but do not peel. Slice. Dissolve salt in water, pour over sliced vegetables. Let stand 3 hours, drain. Heat vinegar, sugar and spices to boiling point. Add vegetables and bring to boiling point again. Let cool. Pack into sterilized jars and seal.
